Baking and managing the kids are two elements that don’t really go in our house. I often bake when the kids are out of the house or napping.

We use a lovely site by blogger Nicola from Mummy to Dex all the time for Kai and for Max. There is a large variety of different baby led recipes on her site ranging from Biscuits to Chicken curry.

I find her site really useful and easy to navigate. Sometimes I will find myself a little stumped on what to do for dinner and Il pop over and get lots of inspiration from her blog.

Her son Dex is 10 months and is in the full swing of baby led, so she’s been a bit of a guinea pig with what works and what doesn’t.

A while ago Nicola posted a recipe Banana and peanut butter Oat biscuits which looked really easy. Easy is what you want when cooking for kid’s, too many recipes are full of long complicated steps.

When you have a toddler demanding your attention and a grisly baby you need to be able to whip food up pronto.

I cooked the biscuits earlier in the week and they seemed to go down a treat.

My niece ate 3 so I’m guessing they we good.

I did taste one and they weren’t to my liking but then again I am more of a bourbon biscuit kind of a girl.

This morning while the baby was napping and Max was at nursery I gave the recipe another bash. This time I filmed it.

Here is the second half of the bake-off, 12 minutes in the oven and tada.

1 Egg

1 Banana

60g Porridge Oats

Hand full of sultanas

Step One:

Preheat the oven to 200 degrees. Grease a baking tray or line it with greaseproof paper.

Step Two:

Mash 1 Banana in a bowl. Add the egg and combine. Measure out 60g Porridge oats add those to the mix and give it a good stir. The end result should be a gloopy kind of dough. I did 3 without and 2 with sultanas.

Step Three:

Use a spoon to create cookie shaped piles on your baking tray.

Step Four:

Bake in the oven for 12 mins, give it a few mins longer if you require a crispier biscuit (just make sure they don’t burn)

Let me know if you have made these biscuits or if there is anything you would add or change about the recipe.
